Instructions
Gently pat the coldwater shrimp dry and place in a mixing bowl. Because they are pre-cooked, do not cook again — simply warm slightly at room temperature if needed.
Add avocado, orange, red chilli, red onion, lime juice, olive oil, cilantro, salt, and pepper. Toss gently to combine without breaking the shrimp.
Spoon the shrimp mixture into crisp lettuce leaves just before serving. Arrange on a platter and serve immediately.
