Ingredients
Hot Smoked Maple Sockeye Salmon Nuggets
200g pasta (linguine or spaghetti)
2 tbsp olive oil
2 cloves garlic, minced
2 cups fresh spinach
1 lemon (zest + juice)
¼ cup reserved pasta water
Salt & pepper
Optional: parmesan

Instructions
Cook pasta in salted water until al dente and reserve some pasta water.
Heat olive oil in a pan and sauté garlic until fragrant.
Add spinach and cook until wilted.
Stir in lemon zest, juice, and a splash of pasta water.
Add cooked pasta and toss to combine.
Gently fold in salmon and warm briefly.
Season, add parmesan if using, and serve immediately.
