- 1 zucchini, sliced
- 1 bell pepper, sliced
- 1 tbsp olive oil

- Handful of arugula or greens
- ¼ cup feta (optional)
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1 tsp maple syrup
- Salt & pepper

Instructions
