Crispy Cod and Potato Croquettes

Ingredients

  • Larry’s Catch Cod & Potato Cakes (thawed)
  • 1/4 cup breadcrumbs (panko recommended)
  • 2 tbsp grated parmesan (optional)
  • 1 tbsp fresh parsley or chives, finely chopped
  • 1/2 tsp garlic powder
  • 1 egg
  • Salt & pepper to taste
  • Olive oil spray

Instructions

  1. Fully thaw the cod and potato cakes, then place them in a bowl and gently break apart with a fork.
  2. Add parmesan, herbs, garlic powder, and any optional ingredients, then mix until well combined.
  3. Form the mixture into small balls, about 2–3 inches in size.
  4. Beat the egg in a small bowl.
  5. Dip each croquette into the egg, then roll in breadcrumbs until fully coated.
  6. Preheat the air fryer to 400°F (200°C).
  7. Lightly spray the croquettes with oil and place them in the air fryer basket.
  8. Cook for 10–12 minutes, flipping halfway through, until golden brown and crispy.
