Lemon Garlic Butter Pickerel Foil Pack

  • 1 lb (454 g) wild pickerel fillets, thawed and patted dry
  • 3/4 tsp fine sea salt (or to taste)
  • 1/4 tsp black pepper
  • 2 tbsp butter (or olive oil for dairy-free)
  • 2 garlic cloves, thinly sliced
  • 1/2 lemon, sliced into rounds
  • 1 tbsp fresh dill or parsley, chopped
  • 1 tbsp lemon juice (for finishing)
  • Optional: thin asparagus or zucchini slices

Instructions

  1. Preheat oven to 400°F (205°C) or prepare a medium grill.
  2. Place each pickerel fillet on a sheet of foil and season with salt and pepper.
  3. Add butter (or olive oil), sliced garlic, lemon rounds, herbs, and optional vegetables.
  4. Fold the foil tightly into sealed packets, leaving space inside for steam.
  5. Bake or grill for 10–12 minutes until the fish flakes easily.
  6. Carefully open the packets, finish with lemon juice, and serve immediately.
