Cooking Reccomendations
Thawing
- Overnight: Place the frozen pickerel in the refrigerator overnight for a gentle, even thaw.
- Quick Thaw: Submerge the sealed bag of pickerel in cold water for 30–45 minutes, changing the water halfway through if needed.
Cooking (Pan-Seared)
- Remove thawed pickerel from packaging and pat dry with paper towels.
- Lightly season both sides with salt, pepper, and a pinch of paprika or lemon pepper.
- Heat a non-stick or cast-iron skillet over medium-high heat and add a splash of oil or a small pat of butter.
- Place the fillets skin-side down (if skin-on) and cook for 2–3 minutes until the edges turn golden and crisp.
- Flip and cook the other side for another 1–2 minutes, until the fish is opaque and flakes easily with a fork.
- Serve with a squeeze of fresh lemon juice and your favourite seasonal vegetables or grains.
