Lobster Quiche with Gruyère, Tarragon & Chives

Ingredients

  • 1 (9-inch) deep-dish pie crust (store-bought or homemade)
  • 1 lb cooked Atlantic lobster meat, chopped into 1/2–1 inch pieces
  • 1 tbsp butter
  • 1 small shallot, finely minced
  • 1 clove garlic, finely minced
  • 1 cup Gruyère cheese, grated (Swiss works too)
  • 2 tbsp fresh chives, chopped
  • 1 tbsp fresh tarragon, chopped (optional)
  • 1/2 cup baby spinach or sautéed leeks (optional)
  • 4 large eggs
  • 1 1/2 cups heavy cream (or 1 cup cream + 1/2 cup whole milk)
  • Salt and white pepper, to taste
  • 1/8 tsp nutmeg
  • Pinch of paprika or cayenne

Instructions

  1. Preheat oven to 375°F (190°C). Line the pie crust with parchment and fill with pie weights or dry beans.
  2. Blind bake for 12 minutes, remove weights, and bake 5–7 minutes more until lightly golden. Let cool slightly and reduce oven to 350°F (175°C).
  3. Melt butter in a small skillet over medium heat. Sauté shallot for 2–3 minutes until soft, then add garlic for the final 30 seconds.
  4. Gently fold in the lobster just to warm through. Remove from heat.
  5. Sprinkle half the Gruyère evenly over the crust base.
  6. Spread the lobster mixture evenly in the crust and scatter over chives, tarragon, and spinach or leeks if using.
  7. Whisk together eggs, cream, salt, nutmeg, and pepper until smooth.
  8. Pour custard gently over the filling and top with remaining Gruyère and a pinch of paprika or cayenne.
  9. Bake 40–50 minutes at 350°F (175°C) until the center is just set with a slight jiggle.
  10. Cool 15–20 minutes before slicing and serving.
