Miso Maple Glazed Black Cod

Crispy skin black cod glazed with miso and maple — rich, caramelized, and perfectly balanced with sweet umami flavour.

Ingredients

  • 4 fillets (about 6 oz each) Larry’s Catch Wild Black Cod, skin on
  • 2 tbsp white miso paste
  • 1 tbsp pure maple syrup
  • 1 tbsp mirin
  • 1 tbsp soy sauce
  • 1 tsp freshly grated ginger
  • 1 tsp fresh lemon juice
  • Neutral oil, for searing
  • Optional garnish: sliced scallions

Instructions

  1. In a small bowl, whisk together white miso paste, maple syrup, mirin, soy sauce, grated ginger, and lemon juice until smooth.
  2. Pat the black cod fillets very dry and lightly coat with the glaze. Marinate for 15–30 minutes.
  3. Preheat oven to 400°F (200°C).
  4. Heat a heavy skillet over medium-high heat and add a thin layer of neutral oil.
  5. Place fish skin-side down and gently press for 20–30 seconds to prevent curling.
  6. Cook skin-side down for 4–5 minutes until the skin is crisp and golden.
  7. Flip the fish and brush additional glaze over the top.
  8. Transfer the skillet to the oven and bake for 6–8 minutes, until the fish flakes easily.
  9. Optional: broil briefly for extra caramelization.
  10. Rest for 2 minutes before serving and garnish with sliced scallions.
