Pan Frying Scallops

Ingredients
- Wild Atlantic sea scallops
- Neutral oil or butter (or combination of both)
- Sea salt
- Fresh cracked black pepper
- Optional: lemon wedges
- Optional: fresh herbs (parsley, chives, or thyme)
- Heavy pan or skillet (stainless steel or cast iron recommended)
- Paper towels
- Tongs or fish spatula
Instructions
- Pat scallops completely dry with paper towels.
- Season lightly with salt and fresh cracked pepper.
- Heat a heavy pan over medium-high to high heat until very hot.
- Add a small amount of neutral oil or oil-butter mix.
- Place scallops in the pan with space between each piece.
- Cook without moving for 1–2 minutes until a golden crust forms.
- Flip gently using tongs.
- Cook another 1–2 minutes until opaque and tender.
- Remove immediately to prevent overcooking.
- Optional: finish with butter, lemon juice, or fresh herbs.
