  • 2 Larry’s Catch Breaded Haddock fillets
  • 2 soft sandwich rolls or brioche buns
  • 1 cup shredded iceberg lettuce
  • ½ cup sliced dill pickles
  • 2 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • ½ tsp Cajun seasoning
  • 1 tsp fresh lemon juice
  • 1 tbsp butter (for toasting buns)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place frozen breaded haddock fillets on a parchment-lined baking sheet, leaving space between each.
  3. Bake for 15–18 minutes, flipping once halfway through, until golden and crisp.
  4. Meanwhile, mix mayonnaise, Dijon mustard, Cajun seasoning, and lemon juice in a small bowl.
  5. Lightly butter the buns and toast in a pan over medium heat until golden.
  6. Spread Cajun mayo on both sides of each bun.
  7. Layer lettuce, crispy haddock, and pickles onto the buns.
  8. Serve immediately while hot.
