  • 1 lb Larry’s Catch Wild Atlantic Scallops, patted dry
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper, to taste
  • Lemon wedges (for serving)
  • Extra fresh parsley, chopped (for garnish)

Instructions

  1. Whisk olive oil, lemon zest, lemon juice, garlic, parsley, thyme, salt, and pepper in a bowl.
  2. Add scallops and gently toss to coat. Marinate for 10 minutes.
  3. Preheat a grill or grill pan to medium-high heat and lightly oil the grates.
  4. Place scallops on the grill with space between each one.
  5. Grill 1–2 minutes on the first side until grill marks form.
  6. Flip and grill 1–2 minutes more, just until opaque. Avoid overcooking.
  7. Transfer to a plate and garnish with extra parsley.
  8. Serve immediately with lemon wedges.
