  • 2 cups water, fish stock, or light broth

  • 1/2 tsp freshly cracked black pepper

Instructions

  1. In a poaching pan, combine water or broth with olive oil, salt, pepper, lemon slices, and optional herbs. Bring to a gentle simmer over medium heat.
  2. Pat the Rockfish fillets dry and gently place them into the simmering liquid.
  3. Poach the fillets for 6–10 minutes, depending on thickness, until the fish is opaque and flakes easily with a fork.
  4. Remove the fillets from the liquid with a slotted spatula and let rest for 1–2 minutes.
