Ingredients & Materials

Buy Rockfish (Ocean Perch) Now
  • 1 lb Rockfish (Ocean Perch) fillets
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • Wood chips for smoking (applewood, cherrywood, or hickory recommended)
  • Optional: lemon slices and fresh herbs for garnish
  • Smoker or grill with smoking setup
  • Slotted spatula or tongs

Instructions

  1. Preheat your smoker to 180–225°F (82–107°C) and soak wood chips in water for 30 minutes if needed.
  2. Pat the Rockfish fillets dry and rub lightly with olive oil. Season with salt and pepper.
  3. Place the fillets on the smoker rack and smoke for 30–60 minutes, depending on thickness, until the fish is opaque and flakes easily.
  4. Remove the fish from the smoker and let rest for 2–3 minutes.
  5. Serve immediately, garnished with lemon slices or fresh herbs if desired.
