  • 2 cups all-purpose flour
  • 2 eggs
  • 1 tbsp olive oil
  • Pinch of salt
  • 1 pack snow crab leg meat (16 oz, merus)
  • ½ cup ricotta cheese
  • 1 tbsp lemon zest
  • 1 tbsp parsley, chopped
  • Salt and pepper
  • 3 tbsp butter
  • 1 clove garlic, minced
  • Juice of 1 lemon
  • 2 tbsp pasta water

Instructions

  • Mix flour, eggs, olive oil, and salt into a dough. Knead until smooth, then rest for 20 minutes.
  • Gently combine crab, ricotta, lemon zest, parsley, salt, and pepper for the filling.
  • Roll dough thin and place small spoonfuls of filling. Cover with another sheet and seal, then cut into ravioli.
  • Boil ravioli in salted water for 3–4 minutes until they float.
  • Meanwhile, melt butter with garlic, then add lemon juice and a splash of pasta water.
  • Toss cooked ravioli gently in the sauce and serve immediately.
