Ingredients (Serves 2–3)
8oz Larry’s Catch coldwater shrimp, thawed and patted dry
1 ripe avocado, diced
1 small red chilli, thinly sliced (adjust to taste)
1 navel orange, peeled and segmented (reserve a little juice)
1 tbsp olive oil
1 tsp rice vinegar (or white wine vinegar)
1 tsp honey
Pinch of sea salt
1 head butter lettuce or gem lettuce, leaves separated
Fresh cilantro or mint leaves, for garnish
Instructions
In a small bowl, whisk together olive oil, vinegar, honey, reserved orange juice, and sea salt to make a light dressing.
In a separate bowl, gently toss shrimp, avocado, orange segments, and sliced chilli with the dressing.
