Ingredients (serves 6)
- 1 lb Larry’s Catch lobster meat (cooked, shelled)
- 12 oz whole wheat pasta (elbows or shells work well)
- 2 tbsp butter
- 2 tbsp flour
- 3 cups milk (2% or whole)
- 1 cup plain Greek yogurt
- 2 cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 1 tsp Dijon mustard
- ½ tsp paprika
- Salt and pepper to taste
- ½ cup panko breadcrumbs (optional, for topping)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large saucepan, melt butter over medium heat. Stir in flour to make a roux, cooking for 1–2 minutes.
- Slowly whisk in milk until smooth. Simmer until thickened, about 5 minutes.
- Stir in yogurt, cheddar, Parmesan, mustard, paprika, salt, and pepper until cheese melts.
- Fold in cooked pasta and lobster meat. Mix gently to coat.
- (Optional) Transfer to a baking dish, sprinkle with breadcrumbs, and broil for 2–3 minutes until golden.
