  • 1 lb Atlantic lobster meat (cooked, shelled)
  • 12 oz whole wheat pasta (elbows or shells)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 3 cups milk (2% or whole)
  • 1 cup plain Greek yogurt
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 tsp Dijon mustard
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup panko breadcrumbs (optional, for topping)

Instructions

  1. Cook whole wheat pasta according to package directions until al dente. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat.
  3. Stir in flour to create a roux and cook for 1–2 minutes.
  4. Slowly whisk in milk until smooth and simmer for about 5 minutes until thickened.
  5. Stir in Greek yogurt, cheddar cheese, Parmesan, Dijon mustard, paprika, salt, and pepper until melted and creamy.
  6. Fold in cooked pasta and lobster meat gently to coat.
  7. Optional: Transfer to a baking dish, sprinkle with panko breadcrumbs, and broil 2–3 minutes until golden.
  8. Serve warm.
