  • 2 Larry’s Catch Breaded Haddock fillets
  • 1 cup cooked jasmine rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ¼ cup crumbled feta cheese
  • 2 tbsp chopped fresh parsley
  • ¼ cup tahini
  • 1 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • 1 tbsp warm water
  • ½ tsp garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place frozen breaded haddock fillets on a parchment-lined baking sheet, leaving space between each.
  3. Bake for 15–18 minutes, flipping once halfway through, until golden and crisp.
  4. Meanwhile, whisk tahini, lemon juice, olive oil, warm water, garlic powder, salt, and pepper in a small bowl until smooth.
  5. Divide cooked rice or quinoa between serving bowls.
  6. Top with tomatoes, cucumber, red onion, and feta.
  7. Break crispy haddock into large pieces and place over the bowl.
  8. Drizzle with lemon tahini sauce and garnish with fresh parsley.
  9. Serve immediately.
