Garlic Lemon Shrimp

Ingredients:

  • 1 lb Larry's Catch Wild Atlantic Shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 3 tbsp olive oil, divided
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

Prepare the Shrimp

  • Rinse the shrimp under cold water, then pat dry with a paper towel to remove any excess moisture. This helps them cook evenly and prevents them from steaming in the skillet.
  • Season the shrimp lightly with salt and pepper on both sides. Set aside.

Trim and Slice the Asparagus

  • Rinse the asparagus and trim off the tough ends (usually the bottom 1-2 inches).
  • Slice the asparagus into 2-inch pieces to ensure they cook quickly and evenly.

Sauté the Asparagus

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  • Once the oil is warm, add the asparagus pieces in a single layer. Sauté for 3-4 minutes, stirring occasionally, until the asparagus is bright green and slightly tender but still crisp.
  • Transfer the asparagus to a plate and set aside.

Cook the Garlic and Shrimp

  • In the same skillet, add the remaining 2 tablespoons of olive oil over medium-high heat.
  • Add the minced garlic to the skillet and cook for about 1 minute, stirring constantly until it becomes fragrant. Be careful not to let the garlic burn, as it can turn bitter.
  • Place the shrimp in the skillet in a single layer, cooking them for 2-3 minutes on one side until they start to turn pink.
  • Flip the shrimp and cook the other side for an additional 2-3 minutes until the shrimp are opaque and fully cooked. The shrimp should be pink and firm but not overcooked.

Add Lemon Zest and Juice

  • Once the shrimp are cooked through, add the lemon zest and juice directly into the skillet.
  • Stir well, coating the shrimp and garlic with the lemony sauce. The citrus will bring a bright flavour that complements the natural sweetness of the shrimp.

Combine Shrimp and Asparagus

  • Add the sautéed asparagus back to the skillet, stirring gently to combine with the shrimp and lemon garlic sauce. Allow everything to heat through for about 1 minute.

Serve

  • Transfer the shrimp and asparagus to a serving platter.
  • Garnish with freshly chopped parsley and add extra lemon wedges on the side, if desired. This dish pairs well with rice, pasta, or crusty bread to soak up the lemon-garlic sauce.
