Lobster Mac & Cheese (Comfort Food with a Healthy Twist)

Cozy comfort food with a lighter twist - rich, creamy, and packed with Canadian lobster. Perfect for fall evenings.

Ingredients (serves 6)

  • 1 lb Larry’s Catch lobster meat (cooked, shelled)
  • 12 oz whole wheat pasta (elbows or shells work well)
  • 2 tbsp butter
  • 2 tbsp flour
  • 3 cups milk (2% or whole)
  • 1 cup plain Greek yogurt
  • 2 cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • ½ tsp paprika
  • Salt and pepper to taste
  • ½ cup panko breadcrumbs (optional, for topping)

Instructions

  1. Cook pasta according to package directions until al dente. Drain and set aside.
  2. In a large saucepan, melt butter over medium heat. Stir in flour to make a roux, cooking for 1–2 minutes.
  3. Slowly whisk in milk until smooth. Simmer until thickened, about 5 minutes.
  4. Stir in yogurt, cheddar, Parmesan, mustard, paprika, salt, and pepper until cheese melts.
  5. Fold in cooked pasta and lobster meat. Mix gently to coat.
  6. (Optional) Transfer to a baking dish, sprinkle with breadcrumbs, and broil for 2–3 minutes until golden.
  7. Serve warm and enjoy a cozy, indulgent fall dinner.
