Ingredients:
- 1 lb cooked lobster meat, chopped into bite-sized pieces
- 1/4 cup good-quality mayonnaise (adjust to taste)
- 1–2 tbsp finely diced celery
- 1 tsp fresh lemon juice
- Pinch of salt
- Pinch of pepper
- Brioche hot dog buns
- 2–3 tbsp butter (for toasting)
- Optional garnish: chives or a little extra lemon wedge
Instructions:
1. Prepare Lobster Filling:
- In a bowl, gently mix the chopped lobster meat, mayonnaise, celery, lemon juice, salt, and pepper.
- Don’t over-mix - you want nice, meaty chunks with just enough mayo to coat.
2. Toast the Brioche Buns:
- Heat a non-stick or cast iron pan over medium heat.
- Generously butter the outsides (both sides) of each brioche bun.
- Place the buns in the pan and toast until golden and crispy on both sides (about 1–2 minutes per side).
3. Assemble:
- Open the toasted brioche slightly without tearing it apart.Spoon the lobster mixture evenly into each bun, piling it high.
4. Serve Immediately:
- Optional: sprinkle with fresh chives or serve with a lemon wedge on the side for a little brightness.
Tips for authenticity:
- Nova Scotia lobster rolls are usually simple - no fancy seasoning, no overpowering flavours.
- Keep mayo light - it’s a lobster roll, not a mayo roll.
- Optional sides: bag of kettle chips, coleslaw, or a simple green salad.
