  • 1 lb cooked lobster meat, chopped into bite-sized pieces
  • 1/4 cup good-quality mayonnaise (adjust to taste)
  • 1–2 tbsp finely diced celery
  • 1 tsp fresh lemon juice
  • Pinch of salt
  • Pinch of pepper
  • Brioche hot dog buns
  • 2–3 tbsp butter (for toasting)
  • Optional garnish: chives or a little extra lemon wedge

Instructions

  1. In a bowl, gently mix chopped lobster meat, mayonnaise, diced celery, lemon juice, salt, and pepper. Avoid over-mixing to keep the lobster in large, meaty pieces.
  2. Heat a non-stick or cast iron pan over medium heat.
  3. Butter the outsides of each brioche hot dog bun generously.
  4. Place buns in the pan and toast until golden and crisp, about 1–2 minutes per side.
  5. Open the toasted buns slightly without tearing.
  6. Spoon the lobster mixture evenly into each bun, piling high.
  7. Optional: garnish with fresh chives or serve with a lemon wedge.
  8. Serve immediately while warm and crisp.
