Ingredients & Materials

Buy Rockfish (Ocean Perch) Now
  • 1 lb (450 g) ocean perch (rockfish) fillets
  • Salt and pepper, to taste
  • 1–2 tbsp olive oil or neutral cooking oil
  • 1 tbsp butter (optional)
  • Lemon wedges, for serving
  • Optional: paprika or garlic powder
  • Large non-stick or stainless steel skillet
  • Thin fish spatula
  • Paper towels
  • Tongs (optional)

Instructions

  1. Pat ocean perch fillets completely dry with paper towels.
  2. Season lightly with salt, pepper, and optional spices.
  3. Heat a skillet over medium-high heat and add oil or oil with butter.
  4. Place fillets into the hot pan without overcrowding.
  5. Cook for 2–3 minutes without moving until lightly golden.
  6. Flip gently with a thin spatula and cook another 2–3 minutes.
  7. Remove from heat once the fish flakes easily and turns opaque.
  8. Finish with fresh lemon and serve immediately.
