  • 1 lb Larry’s Catch Chowder Mix
  • 2 cups cooked white rice (jasmine or basmati)
  • 2 tbsp butter
  • 1/2 cup fish or vegetable broth
  • 1/4 cup heavy cream (optional)
  • 1 tsp lemon juice
  • Salt and freshly cracked pepper, to taste
  • 2 tbsp fresh parsley or chives, chopped
  • Lemon wedges (optional)

Instructions

  • Warm cooked rice in a saucepan or microwave until hot and divide into serving bowls.
  • In a skillet over medium heat, melt butter.
  • Add broth and chowder mix and simmer gently for 4–6 minutes until seafood is just cooked through.
  • Stir in heavy cream (if using) and lemon juice and warm gently without boiling.
  • Season with salt and freshly cracked pepper to taste.
  • Spoon the creamy seafood mixture over the warm rice.
  • Finish with chopped herbs and serve with lemon wedges if desired.
