  • Salt and pepper, to taste
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped (or 1/2 tsp dried thyme)
  • 1/2 tsp paprika (optional, for a hint of colour)
  • Lemon wedges, for serving

For Serving:

  • Steamed vegetables or a simple salad
  • Crusty bread or rice (to soak up the sauce)

Instructions:

Prepare the Baking Dish

  • Preheat your oven to 400°F (200°C). Lightly oil a baking dish large enough to hold the haddock fillets in a single layer.
