Ingredients & Materials

Buy Rockfish (Ocean Perch) Now
  • 1 lb (450 g) ocean perch (rockfish) fillets
  • 1–2 tbsp olive oil
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Optional: paprika, garlic powder, fresh herbs, or lemon zest
  • BBQ or grill (preheated to medium-high)
  • Grill brush (for cleaning grates)
  • Tongs or wide fish spatula
  • Grill basket (optional but helpful for delicate fillets)
  • Paper towels

Instructions

  1. Preheat the BBQ to medium-high heat (400–450°F / 205–230°C).
  2. Pat ocean perch fillets dry and brush lightly with olive oil.
  3. Season with salt, pepper, and optional herbs or spices.
  4. Oil the grill grates well or use a grill basket to prevent sticking.
  5. Place fillets on the grill and cook for 3–4 minutes without moving.
  6. Flip carefully using a wide spatula and cook another 2–3 minutes.
  7. Remove from the grill once the fish flakes easily and turns opaque.
  8. Finish with fresh lemon juice and herbs and serve immediately.
