Cilantro Lime Shrimp Tacos

Ingredients:

  • 1 lb Larry's Catch Wild Atlantic Shrimp, peeled and deveined
  • 2 tbsp olive oil, divided
  • 2 cloves garlic, minced
  • Zest and juice of 1 lime
  • Salt and pepper, to taste
  • 8 small corn or flour tortillas

Taco Toppings:

  • 1/2 cup red cabbage, thinly sliced
  • 1/2 cup shredded lettuce
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, sliced
  • Lime wedges, for serving

Cilantro Lime Sauce:

  • 1/4 cup Greek yogurt or sour cream
  • 1 tbsp mayonnaise
  • Zest and juice of 1/2 lime
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper, to taste

Instructions:

Prepare the Shrimp

  • Rinse the shrimp under cold water, then pat them dry with paper towels.
  • Place the shrimp in a bowl and add 1 tablespoon of olive oil, minced garlic, lime zest, and lime juice. Season lightly with salt and pepper, then toss to coat the shrimp evenly.

Make the Cilantro Lime Sauce

  • In a small bowl, combine the Greek yogurt or sour cream, mayonnaise, lime zest, lime juice, and chopped cilantro.
  • Season with a pinch of salt and pepper, and stir until smooth. Set the sauce aside to drizzle on the tacos later.

Cook the Shrimp

  • Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Add the shrimp in a single layer and cook for 2-3 minutes on one side until they start to turn pink.
  • Flip the shrimp and cook the other side for another 2-3 minutes until they are fully pink and opaque. Be careful not to overcook them.
  • Remove the shrimp from the skillet and set aside.

Warm the Tortillas

  • In a dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until they’re soft and pliable. Keep the tortillas warm by covering them with a clean towel.

Assemble the Tacos

  • Place a few shrimp on each tortilla. Top with red cabbage, shredded lettuce, avocado slices, and a sprinkle of fresh cilantro.
  • Drizzle the cilantro lime sauce over the top, adding extra lime wedges on the side for a burst of brightness.
