Citrus Glazed Sockeye Salmon with Roasted Vegetables

Ingredients:

Citrus Glaze:

  • 1/4 cup fresh orange juice
  • 1 tbsp lemon juice
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Zest of 1 orange
  • 1/2 tsp fresh ginger, grated (optional, for a touch of warmth)

Roasted Vegetables:

  • 1 cup baby carrots
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Preheat the Oven

    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly oil it.
  2. Prepare the Glaze

    • In a small bowl, whisk together orange juice, lemon juice, honey or maple syrup, Dijon mustard, orange zest, and grated ginger. Set aside.
  3. Season and Arrange the Salmon and Vegetables

    • Place the salmon fillets on one side of the baking sheet. Drizzle with olive oil and season with salt and pepper.
    • On the other side of the baking sheet, arrange the baby carrots, bell pepper, and zucchini. Drizzle with olive oil, season with salt and pepper, and toss to coat.
  4. Add the Glaze and Bake

    • Brush the citrus glaze generously over the salmon fillets. Reserve a bit of the glaze for basting.
    • Bake for 15-20 minutes, brushing the salmon with the remaining glaze halfway through, until the salmon flakes easily with a fork and the vegetables are tender.
  5. Serve

    • Plate the salmon with the roasted vegetables, and garnish with extra orange zest or fresh herbs if desired.
