Ingredients:

  • 1/2 cup flour
  • 1/2 cup cornmeal or breadcrumbs
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 cup olive oil

Garlic Butter Sauce:

  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • Juice of 1/2 lemon

For Serving:

  • Lemon wedges
  • Steamed vegetables or a side of rice

Instructions:

Prepare the Haddock

  • Pat the haddock fillets dry with paper towels. Season both sides with a light sprinkle of salt and pepper to enhance their flavour.
Prepare the Coating
  • In a shallow dish, mix the flour, cornmeal or breadcrumbs, paprika, and garlic powder. This combination creates a crispy, golden crust that complements the haddock's tender interior.
Coat the Haddock
  • Dredge each haddock fillet in the flour mixture, pressing gently to ensure an even coating on both sides. Shake off any excess.
