  • 1 lb Larry’s Catch Lobster Meat
  • 8 slider buns
  • 1/4 cup mayo
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh chives, finely chopped
  • Salt and pepper to taste
  • Butter for toasting buns
  • Optional: Lettuce leaves for added crunch

Instructions

  1. Thaw lobster meat in the refrigerator for 8–12 hours, or place the sealed bag in cold water for 30–40 minutes, changing the water halfway through.
  2. In a large bowl, gently combine lobster meat, mayonnaise, lemon juice, and chopped chives.
  3. Season with salt and pepper to taste, mixing lightly to keep the lobster in chunky pieces.
  4. Heat a skillet over medium heat and butter the insides of the slider buns.
  5. Toast buns until golden brown.
  6. If using lettuce, place a leaf on the bottom half of each bun.
  7. Spoon lobster mixture onto each bun and cover with the top.
  8. Serve immediately while buns are warm and crisp.
