Lobster Risotto

Creamy Lobster Risotto

Ingredients:

  • 1 lb Larry's Catch Cooked Atlantic Lobster Meat, chopped
  • 1 1/2 cups Arborio rice
  • 4 cups seafood or vegetable stock, kept warm
  • 1/2 cup dry white wine
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh chives, chopped
  • Salt and pepper, to taste
  • Lemon zest, for garnish

Instructions:

Warm the Stock

  • Keep your stock warm over low heat, ready to ladle into the risotto. Using seafood stock deepens the dish’s flavour, highlighting the quality of fresh seafood like our Atlantic Lobster.

Sauté the Onion and Garlic

  • In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium heat.
  • Add the chopped onion and cook for 3-4 minutes until softened. Add the garlic and cook for another minute, allowing the flavours to meld.

Toast the Rice

  • Add the Arborio rice to the skillet, stirring to coat each grain. Toast the rice for 2-3 minutes until the edges become translucent, creating a creamy base that pairs perfectly with Nova Scotia seafood.

Add Wine and Begin Cooking the Rice

  • Pour in the white wine and stir until mostly absorbed. Start adding the warm stock, one ladleful at a time, stirring as each addition is absorbed.
  • Continue for 18-20 minutes until the rice is tender and creamy, much like what you’d find at a fresh fish market in a coastal town.

Add the Lobster and Cheese

  • Gently fold in the Cooked Atlantic Lobster Meat, adding a fresh, subtly sweet taste that enhances the risotto’s richness.
  • Stir in the Parmesan cheese and remaining butter, seasoning with salt and pepper to taste.

Serve and Garnish

  • Spoon the risotto onto plates, garnishing with fresh chives and a sprinkle of lemon zest. A lemon wedge on the side adds a bright finish.
