Ingredients & Materials

  • 1 Saku of Bluefin Tuna (approx. 8–10 oz)
  • 2 cups water, fish stock, or light broth
  • 1 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1 lemon, sliced
  • Optional: fresh herbs like parsley, thyme, or dill
  • Poaching pan or skillet
  • Slotted spatula or spoon

Instructions

  1. In a poaching pan, combine water or broth with olive oil, salt, pepper, lemon slices, and herbs. Bring to a gentle simmer over medium heat.
  2. Pat the tuna Saku dry and gently place it into the simmering liquid.
  3. Poach the tuna for 6–10 minutes, depending on thickness, until the center is tender but still slightly pink.
  4. Remove the tuna from the liquid with a slotted spatula and let rest for 2 minutes.
  5. Slice against the grain and serve immediately. Garnish with additional lemon slices or fresh herbs if desired.
