Cook Time: 10 minutes
Ingredients:
- 1 lb Larry's Catch Wild Atlantic Shrimp, peeled and deveined
- 2 tbsp olive oil, divided
- Salt and pepper, to taste
- 1/4 cup honey
- 3 tbsp soy sauce (low sodium)
- 1 tbsp sriracha or your preferred hot sauce (adjust to taste)
- 4 cloves garlic, minced
- 1/2 tsp fresh ginger, grated
- 2 green onions, chopped (for garnish)
- Sesame seeds, for garnish (optional)
Instructions:
Prepare the Shrimp
- Rinse the shrimp under cold water, then pat dry with paper towels. This helps the shrimp cook more evenly and prevents them from becoming watery in the pan.
- Season the shrimp lightly with a pinch of salt and pepper on both sides to enhance their natural flavour. Set aside.
Mix the Honey Garlic Sauce
- In a small bowl, combine the honey, soy sauce, sriracha (or your preferred hot sauce), minced garlic, and grated ginger. Whisk until the ingredients are fully mixed and the honey dissolves. Set this sauce mixture aside for later.
Cook the Shrimp
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Give the oil a moment to warm up so that it’s shimmering but not smoking.
- Add the shrimp in a single layer, making sure they don’t overlap. Cook the shrimp for about 2 minutes on one side until they start to turn pink and are opaque.
- Flip each shrimp using tongs and cook the other side for another 2 minutes, until the shrimp are fully pink and just cooked through. Be careful not to overcook them, as they can become rubbery.
- Transfer the cooked shrimp to a plate and set aside.
Cook the Honey Garlic Sauce
- In the same skillet, add the remaining 1 tablespoon of olive oil. Pour in the honey garlic sauce mixture, stirring constantly.
- Bring the sauce to a simmer and cook for about 1-2 minutes until it slightly thickens and the garlic becomes fragrant. Stir frequently to prevent the garlic from burning.
Combine Shrimp with Sauce
- Return the cooked shrimp to the skillet, and use a spoon or spatula to toss them in the sauce until each piece is well-coated.
- Continue stirring for about 1 minute, just until the shrimp are heated through and the sauce clings nicely to each piece.
Serve
- Transfer the shrimp to a serving dish. Garnish with chopped green onions and sesame seeds, if desired, for added texture and colour.
- Serve immediately with rice, quinoa, or steamed vegetables, letting the sauce drizzle over your side dishes for extra flavour.
