Serves: 4-6
Prep Time: 10 minutes
Cook Time: 30 minutes
Ingredients:
- 1 lb Larry's Catch Chowder Mix
- 2 tbsp butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 2 medium potatoes, peeled and diced
- 2 celery stalks, diced
- 4 cups fish or vegetable broth
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup heavy cream (or substitute with half-and-half for a lighter option)
- Salt and pepper, to taste
- 1/4 cup fresh parsley, chopped (for garnish)
- Oyster crackers or crusty bread, for serving
Instructions:
Sauté the Vegetables
- In a large pot, melt the butter over medium heat. Add the chopped onion and celery and cook for 3-4 minutes until softened.
- Add the garlic and cook for an additional minute, stirring constantly.
Add Potatoes and Broth
- Add the diced potatoes to the pot, then pour in the fish or vegetable broth. Bring the mixture to a gentle simmer and cook for about 10-12 minutes, or until the potatoes are tender.
Add the Chowder Mix and Corn
- Stir in the Larry’s Catch Chowder Mix and corn kernels. Allow the chowder to simmer for another 5-7 minutes, or until the seafood is cooked through and tender.
Add the Cream
- Lower the heat to medium-low and stir in the heavy cream, mixing well. Let the chowder come to a gentle simmer (do not boil), allowing the cream to warm and the flavours to meld.
Season and Serve
- Season the chowder with salt and pepper to taste. Ladle the chowder into bowls, garnish with fresh parsley, and serve with oyster crackers or crusty bread.
