Ingredients (serves 2–3):
- 1 lb (450 g) Ocean Perch fillets, skin removed
- ½ cup all-purpose flour
- 1 large egg, lightly beaten
- ¾ cup panko breadcrumbs
- ½ tsp smoked paprika
- Salt and pepper, to taste
- 2 tbsp unsalted butter and 2 tbsp oil (for frying)
- Lemon wedges, for serving
Instructions:
- Prep the fish: Pat fillets dry with paper towels. Season lightly with salt, pepper, and smoked paprika.
- Set up dredging station: Place flour in one shallow bowl, beaten egg in a second, and panko in a third.
- Coat the fillets: Dredge each fillet in flour, shake off excess, dip in egg, then coat evenly with panko.
- Cook: Heat butter and oil in a skillet over medium heat. Fry the fillets 3–4 minutes per side until golden brown and crispy.
