Lemon Herb Grilled Scallops

Ingredients:

  • 1 lb Larry's Catch Wild Atlantic Scallops, patted dry
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and pepper, to taste

For Serving:

  • Lemon wedges
  • Extra fresh parsley, chopped (for garnish)

Instructions:

Prepare the Marinade

  • In a medium bowl, combine olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, and thyme. Add salt and pepper to taste, and whisk the marinade until well mixed.

Marinate the Scallops

  • Add the scallops to the bowl with the marinade, gently tossing them to coat. Let the scallops marinate for about 10 minutes to absorb the flavours.

Preheat the Grill

  • Preheat your grill or grill pan to medium-high heat. Lightly oil the grill grates to prevent the scallops from sticking.

Grill the Scallops

  • Place the marinated scallops on the grill, leaving space between each one to allow even cooking.
  • Grill the scallops for 2-3 minutes on each side, or until they are opaque and have nice grill marks. Avoid overcooking, as scallops become rubbery if cooked too long.

Serve

  • Transfer the grilled scallops to a serving plate. Garnish with extra fresh parsley and serve with lemon wedges on the side for an extra pop of citrus.
