Ingredients:
- 1 lb Larry's Catch Halibut, cut into 4 fillets
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 tbsp butter
- 1 clove garlic, minced
- 1 pint cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- Zest and juice of 1/2 lemon
- Fresh basil leaves, for garnish (optional)

Instructions:
Prepare the Halibut
- Pat the halibut fillets dry with paper towels. Season both sides lightly with salt and pepper to enhance the delicate flavour of the fish.
Sear the Halibut
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
- Once hot, add the halibut fillets to the skillet. Cook for about 3-4 minutes on each side until the fish is golden brown on the outside and opaque in the centre. Transfer the cooked halibut to a plate and cover loosely with foil to keep warm.
Prepare the Tomato Basil Sauce
- In the same skillet, add the remaining 1 tablespoon of olive oil and the minced garlic. Cook for about 30 seconds until fragrant, being careful not to burn the garlic.
- Add the cherry tomatoes and cook for 3-4 minutes, stirring occasionally, until the tomatoes soften and release their juices, creating a light sauce.
- Stir in the lemon zest, lemon juice, and chopped basil, mixing well. Season with salt and pepper to taste.
Combine and Serve
- Return the halibut fillets to the skillet, spooning the tomato basil sauce over each fillet. Let the fish warm through for about 1 minute.
- Transfer the halibut and tomato basil sauce to serving plates, garnishing with extra fresh basil if desired.
