Ingredients

  • 1 lb Larry’s Catch Halibut, cut into 4 fillets
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 clove garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
  • Fresh basil leaves, for garnish (optional)
  • For serving: steamed rice, pasta, or crusty bread

Instructions

  1. Pat halibut fillets dry with paper towels and season lightly with salt and pepper.
  2. Heat 1 tbsp olive oil and butter in a large skillet over medium-high heat.
  3. Add halibut fillets and cook for 3–4 minutes per side until golden and just opaque. Transfer to a plate and keep warm.
  4. Add remaining olive oil to the skillet and sauté garlic for about 30 seconds until fragrant.
  5. Add cherry tomatoes and cook for 3–4 minutes until softened and releasing their juices.
  6. Stir in lemon zest, lemon juice, and chopped basil. Season with salt and pepper to taste.
  7. Return halibut to the skillet and spoon sauce over the fish. Warm through for about 1 minute.
  8. Transfer to serving plates, garnish with fresh basil, and serve immediately.
