  • 1 (8 oz) pack Larry’s Catch Coldwater Shrimp, thawed and patted dry
  • 1 cup cooked quinoa or couscous (cooled slightly)
  • ½ cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • 2 tbsp Kalamata olives, sliced
  • 2 tbsp fresh parsley, chopped
  • ¼ cup crumbled feta cheese (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • ½ tsp Dijon mustard
  • ½ tsp honey
  • Sea salt, to taste
  • Freshly cracked black pepper, to taste

Instructions

  • Whisk together olive oil, lemon juice, Dijon, honey, salt, and pepper to make the dressing.
  • In a bowl, combine quinoa or couscous with tomatoes, cucumber, red onion, olives, and parsley.
  • Add coldwater shrimp and drizzle with dressing. Toss gently until just coated, keeping the shrimp intact.
  • Finish with feta if using and serve immediately or chilled.
