  • 1 lb bacon-wrapped scallops (frozen)
  • 1 1/2 cups corn kernels (fresh or frozen)
  • 1/2 cup heavy cream
  • 1 tbsp unsalted butter
  • 1 small garlic clove, minced
  • 1 tbsp olive oil
  • Fresh parsley or sage leaves
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place frozen bacon-wrapped scallops on a parchment-lined baking sheet, leaving space between each.
  3. Bake for 18–22 minutes until bacon is crisp and scallops are opaque.
  4. Meanwhile, melt butter in a saucepan over medium heat and add corn and garlic.
  5. Cook for 3–4 minutes, then add heavy cream and simmer gently for about 5 minutes.
  6. Blend the mixture until smooth to create a silky corn purée. Season with salt and pepper.
  7. Heat olive oil in a small pan and fry herb leaves briefly until crisp.
  8. Spoon corn purée onto plates, top with scallops, garnish with crispy herbs, and finish with fresh lemon juice.
