  • 1 lb haddock fillets
  • Salt and pepper, to taste
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp fresh thyme, chopped (or 1/2 tsp dried thyme)
  • 1/2 tsp paprika (optional)
  • Lemon wedges (for serving)
  • Steamed vegetables or simple salad (optional for serving)
  • Crusty bread or rice (optional for serving)

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly oil a baking dish large enough to hold the haddock fillets in a single layer.
  2. Pat the haddock fillets dry with paper towels and season both sides lightly with salt and pepper.
  3. In a small bowl, whisk together olive oil, lemon zest, lemon juice, minced garlic, chopped parsley, thyme, and paprika (if using).
  4. Place the haddock fillets in the prepared baking dish and pour the lemon herb mixture over the top, coating evenly.
  5. Bake for 15–18 minutes, depending on thickness, until the fish is opaque and flakes easily with a fork.
  6. Remove from the oven and let rest briefly.
  7. Serve with lemon wedges and your choice of steamed vegetables, salad, bread, or rice.
