  • 1 lb Larry’s Catch Chowder Mix
  • 12 oz linguine or fettuccine
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small shallot, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine (optional)
  • 1 1/2 cups fish or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Zest of 1/2 lemon
  • Salt and freshly cracked pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1/2 cup corn or peas

Instructions

  • Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1/2 cup pasta water, then drain.
  • In a large skillet, melt butter with olive oil over medium heat. Add shallot and cook 2–3 minutes until softened.
  • Add minced garlic and cook for about 30 seconds until fragrant.
  • Pour in white wine (if using) and simmer 1–2 minutes to reduce slightly.
  • Add broth and bring to a gentle simmer, then stir in heavy cream and parmesan until smooth.
  • Add lemon zest and season with salt and freshly cracked pepper to taste.
  • Stir in the chowder mix and simmer 4–6 minutes until seafood is just cooked through.
  • Add the cooked pasta and toss to coat evenly. Add a splash of reserved pasta water if needed to loosen the sauce.
  • Garnish with chopped parsley and serve immediately.
