Ingredients

  • 1 tsp lime zest
  • Juice of 2 limes
  • 1/4 tsp freshly ground black pepper
  • 1 1/2 cups chopped ripe Roma tomatoes
  • 1/2 cup sliced green onion
  • 1 tbsp tequila
  • 2 Larry’s Catch Halibut steaks
  • 1/4 cup all-purpose flour
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp olive oil

Instructions

  1. In a small bowl, combine lime zest, lime juice, black pepper, chopped tomatoes, green onion, and tequila. Cover and refrigerate for at least 2 hours to allow the flavours to meld.
  2. Preheat oven to 375°F (190°C).
  3. Pat halibut steaks dry and remove skin if desired.
  4. In a shallow bowl, mix flour, salt, and pepper. Lightly coat the halibut steaks, shaking off excess flour.
  5. Heat olive oil in an ovenproof skillet over medium-high heat.
  6. Sear halibut for 4 minutes on one side until golden brown.
  7. Flip the fish, reduce heat slightly, and cook for another 3 minutes.
  8. Spoon chilled salsa over the fish and transfer the skillet to the oven.
  9. Bake for 10–12 minutes, until the halibut flakes easily with a fork.
  10. Serve immediately with Basmati rice and steamed green beans.
