Lemon-Garlic Butter Black Cod

Ingredients (for one portion)

  • 6oz black cod fillet, skin on
  • 1 tbsp unsalted butter, melted
  • 1 small garlic clove, finely minced (or ¼ tsp garlic powder)
  • 1 tsp fresh lemon juice
  • ½ tsp lemon zest
  • Pinch of salt and black pepper
  • Optional garnish: fresh parsley or chives, extra lemon wedge

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment or lightly oil it.
  2. Pat cod dry with paper towel and place skin-side down on the sheet.
  3. In a small bowl, mix melted butter, garlic, lemon juice, lemon zest, salt, and pepper.
  4. Brush or spoon the mixture generously over the fish.
  5. Bake for 10–12 minutes, until the cod flakes easily with a fork.
  6. Optional: broil for the last 1 minute to give the top a light golden finish.
  7. Garnish with fresh herbs and a squeeze of lemon before serving.
