Ingredients

  • Hot Smoked Maple Sockeye Salmon Nuggets
  • 200g pasta (linguine or spaghetti)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 lemon (zest + juice)
  • ¼ cup reserved pasta water
  • Salt & pepper
  • Optional: parmesan

Instructions

  • Cook pasta in salted water until al dente and reserve some pasta water.
  • Heat olive oil in a pan and sauté garlic until fragrant.
  • Add spinach and cook until wilted.
  • Stir in lemon zest, juice, and a splash of pasta water.
  • Add cooked pasta and toss to combine.
  • Gently fold in salmon and warm briefly.
  • Season, add parmesan if using, and serve immediately.
