  • 8 oz cold smoked haddock, flaked
  • 8 oz pasta (linguine, spaghetti, or gluten-free pasta)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 3/4 cup heavy cream
  • 1 tbsp fresh lemon juice
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley or chives, chopped
  • Optional: grated parmesan for serving

Instructions

  1. Cook pasta in salted water according to package instructions, reserving a small amount of pasta water before draining.
  2. Heat olive oil and butter in a pan over medium heat and add minced garlic, cooking briefly until fragrant.
  3. Pour in the cream and simmer gently for 2–3 minutes until slightly thickened.
  4. Add the flaked cold smoked haddock and warm gently without boiling.
  5. Add the cooked pasta and a splash of reserved pasta water if needed to loosen the sauce.
  6. Finish with lemon juice, black pepper, and fresh herbs, then toss gently and serve immediately.
